In celebration of Terra Madre Day on December 8th, the Slow Food Cook Alliance held a wheat-focused event at Gastronometro. Local producers gathered to discuss heirloom seeds and sustainable farming practices. The event specifically highlighted local wheat varieties, such as "sarı buğday" (yellow wheat), and explored the wheat processing methods. Traditional uses of wheat, such as in dishes like "aşure," "keşkek," and "köftelik bulgur," were discussed in depth. Sustainability advocates like Mustafa Alper Ülgen shared valuable insights on the importance of local wheat varieties and ways to prevent food waste.
